Happy Easter

 

I am sitting here cozy in my home writing to all of you. What a weird time it is for all of us. We are still social distancing and “safer at home” and so for most of us that means that we are not with extended family during this holiday.

I don’t know about you, but I really love Easter. Maybe because it feels like the halfway point between Winter and Summer or because it is a good time to spend the entire day in the kitchen after what my Aunt Susie likes to call, “gathering” during the week prior. For my family Easter is not so much about traditions and religion as much as it is about being together, especially now that we are a bit older. Though, for those wondering- the Easter Bunny does still deliver a basket.

We usually start the morning with a light breakfast and soon to follow are the snacks- deviled eggs, stuffed celery, radishes and typically some sort of dip with chips. We graze throughout the day while sipping on rosé or a bright white wine and then we typically eat around 3:30 or 4:00 in the afternoon. We try and dine outside, as it is usually sunny with a slight chill in the air. We are a family who loves dogs, so they tend to outnumber the people. The dogs love running around playing with each other and getting more treats than normal.

Easter isn’t one standard menu. It used to be Honey Baked Ham when I was growing up as the main, but it has since evolved into whatever we decide in the weeks prior. I have been making the Diva’s Can Cook gluten free carrot cake for the past few years, because it is hands down the best carrot cake (gluten free or not) that I have ever had. I am posting a link to the recipe here.

So while I have no clue what we (Zach and our two pups) are eating here in our home, I do know that we are safe and healthy and spending time tucked away in our new home celebrating life and love, and learning to be still in these moments and to have faith that this too will pass.
